Trying to Be Vegetarian Day 5

Real Food Daily Cookbook: Really Fresh, Really Good, Really VegetarianTonight I heated up some meatless meatballs and served them on pita bread with left over enchilada sauce. The side dish was corn and it was really good. If you have noticed, I am trying a lot of "meatless" products that Trader Joe's sells. When you are a meat eater and used to eating meat 3-4 or more times a week, it seems like a natural transition to find meat substitutes when trying to eat healthier.

Tomorrow night will be a little different as there will be no meat substitutes involved. Health wise, I don't feel any significant changes, simply because I haven't been doing this long enough. I do feel better mentally knowing that I am consuming more veggies during dinner.

I don't document breakfast and lunch because those meals are easy to have without meat. Dinner has always been an issue for me. This Sunday when I shop for the week's dinners, I will look up some good vegetarian recipes before I go. AllRecipes.com has a great vegetarian recipe section. I'll pick out 7 recipes for the week and go from there.
